First Landing State Park's Stick Bread Recipe

Saturday October 19th, we hosted our annual Fall Fest here at First Landing State Park and many of you asked for the recipe to our campfire stick bread, so here it is.

We introduced this new treat for roasting over the fire and decided we would call stick bread (pinnebrød). There were many brave souls that gave it a try and we had some requests for the recipe. It is a simple dough that for Fall Fest we wrapped around a tart apple slice. You can skip some of the sugar and cinnamon and wrap it around a hot dog or just have it on its own.
Growing up where I’m from, we used to hike a lot in the woods or go cross country skiing in the winter and we would sometimes have a campfire when we stopped for lunch. We would find some good sticks for roasting our hotdogs and if we were lucky, someone had made stick bread and we got to wrap our hotdogs or just roast it and eat it like that. We added cinnamon to the dough we made for Fall Fest, but you can add a lot of different flavors, for example shredded cheese, bacon, nuts or raisins.
It is a nice addition to your campfire, if you are hiking or camping with a group or with your family.
Stick Bread Recipe:
- 4 cups Flour
- 2 tsp. Baking powder
- 5 tbsp. Sugar
- 1 tsp. Salt
- 100 milliliters or just under 1/2cup Oil
- 200 milliliters or just over 3/4cup Water
- 1 tsp. Cinnamon (if you want, it’s not in the original recipe)
How to mix:
Mix all the dry ingredients in a bowl. Make a grove in the middle, pour and mix little by little with warm water and oil until all the ingredients are mixed smooth. It will have the consistency of play dough.
Put the dough in a tightly sealed container or a sturdy zip lock bag. You can keep the dough cool in the refrigerator overnight before using it.
To roast the dough:
You can swirl it around something like a piece of apple or a hot dog. Or swirl it around your roasting stick. Make sure you don’t swirl it too thick, or the dough will not easily cook all the way through.
